Chocolate Covered Marshmallow Eggs

Last weekend I got together with my 2 sisters and we made chocolate covered marshmallow eggs. This was something our mother did when we were growing up. Having a mother that had a hand dipped chocolate shop, we always had SOMETHING chocolate going on. Anyway this year we decided to make them on our own, as mom's a snowbird in AZ each winter. They may have not turned out beautiful like hers but we had a GREAT time! We even shipped a few to mom and dad in AZ but not all of them survived the heat.

Our little farm.....

I just wanted to share a couple photos of our little peace of heaven. Last night when we left to the store I found 12 deer in the lower yard, 4 were under a tree and I couldn't get a very good shot of them. The pic below shows 8 of them.

As I promised, here is some more information for the scanner that I got Friday....


The National Consumer Panel is a marketing research company that gathers information from average people like you and me and then processes it and sells it to various companies that want statistics on the buying habits of the American public.

Basically what we do is scan the barcodes of EVERY (seriously, EVERY) item we purchase every day. It could be something as simple as a pop at the gas station, we scan it. A large trip to Aldi, we scan it. NCP provides a hand scanner and detailed instructions.

Once a week, the scanner automatically transmits the information online to NCP and they add points into our point account. The more we transmit, the more points we get. In other words, if we go for so many consecutive weeks without forgetting to transmit our purchases, the number of points we get each week goes up. If we forget, so we still get the minimum. 

After you have been a member for a certain length of time (I think it is 60 days, but don’t quote me on that) you can trade your points in for rewards.

Let me just tell you, their rewards are really nice.
We could get:
  1. Cuisinart Sandwich Grill (24,000 points)
  2. Hoover Cordless Wet/Dry Hand Vac (22,000 points)
  3. Huffy 6″ Princess Scooter (24,000 points)
and the list goes on. There are a TON of cool rewards we could turn our points in for, I just listed a few to give you an idea of what is out there.

Some things that interest me in the future are:
  1. 6 qt. Slow Cooker (28,000 points)
  2. Wenzel 2 Room Ponderosa Sport Dome Tent (48,000 points)
  3. Nintendo DL Lite (144,000 points)
  4. Samsung Camcorder (132,000 points)
  5. XBox 360 Elite Package (315,000 points)
And the list goes on. They also do quarterly drawings. The reward right now is a family vacation for four, a car, or $20,000 in cash! Again, the more you transmit, the better your chances are of winning one of the quarterly prizes. The panel will also email you surveys every so often. (I probably get two or so a week). You can log into their website, complete the survey (Most take about 2-3 minutes to complete) and you are given extra points for that. The points can really add up fast if you aren’t forgetful like me.

If you are interested in joining, check out their site National Consumer Panel. Sign up. They may not have a need for your demographic right away, but they will store your information and contact you later down the road as an opening comes up for your area.

Now, I’ll be honest, all of that scanning takes time and is a big PAIN IN THE BUTT when you have already spent an hour or so at the grocery and still have to scan the items before you can put them away; but I am looking forward to the rewards, so in the end, I think it will be worth it!

I'm heading out the door for our soccer game but wanted to mention that yesterday I received my scanner from NCP. I will post more info later about what that means for those of you that have never heard of them. When I started couponing they had a pretty long waiting list so I decided not to apply. But then about a month ago my sister Jonna called me all excited that she had been chosen and it only took her 3 weeks. I decided to apply and was chosen 2 weeks ago!  More info to follow later......we're off to the pitch!

Scrabble Pendants

Thanks to my other sister, Jonna, I've found a new craft for me, making scrabble and tile pendants. It is sooo easy and a lot of fun. Today I made my first two, that I plan on giving to my little nieces. They aren't completely done, I have to wait 2 days for them to dry so that I can put the bails on for the necklace chains. Anyway I wanted to share with you guys my new hobby.

Newly Discovered **Chicken and Rice Casserole**

Alright I must say that I missed the boat with Paula Deen. I've never been one to watch cooking shows, including Rachael Ray. However recently, I was watching quick little videos to earn Swagbucks and came across a whole set of them for Paula Deen. I actually came away with a few recipes from her videos and they have ALL been great, but there is ONE that really stood out for me and I thought that I'd share it with all of you!

Chicken and Rice Casserole



  • Prep Time: 20 min
  • Cook Time: 25 min
  • Level: Easy
  • Serves: 6 to 8 servings
  • Ingredients

    • 2 (14 1/2-ounce) can green beans, drained and rinsed
    • 3 cups diced cooked chicken
    • 1 medium onion, diced and sauteed
    • 1 (8-ounce) can water chestnuts, drained and chopped
    • 1 (4-ounce) can pimentos, drained
    • 1 (10 3/4-ounce) can condensed cream of celery soup
    • 1 cup mayonnaise
    • 1 (6-ounce) box long-grain and wild rice, cooked according to package directions
    • 1 cup grated sharp Cheddar
    • Pinch salt

    Directions

    Preheat oven to 350 degrees F.

    Mix all ingredients together and pour into a greased 3-quart casserole dish. Bake for 20 to 25 minutes or until bubbly. (I topped it off with some French Fried Onions)

    Extreme Couponing
